Beef Pot Roast
No need to cook extra vegetables! This recipe combines a hearty and healthy meat dish with tasty garden vegetables - a perfect balanced meal ideal for Sunday lunch or a family dinner on a cold evening! Garnish with fresh herbs from the garden for a distinct country flavour.
Ingredients: (Serves 6)
Boned shin of beef
Cooking time varies according to the weight of the meat. On average, add 30 minutes of cooking time to every 500g of meat.
1. Brown the shin of beef in a casserole dish coated with Spray 'n Cook.
2. Add boiling water, salt, vegetable stock, cayenne pepper, paprika and garlic.
3. Bring to the boil.
4. Reduce heat and simmer for 30 minutes, stirring occasionally.
5. Add spinach to the top and allow to simmer for a further 20 minutes until the liquid is reduced by a third.
